This is my favorite organic dark chocolate. It has a fresh, not bitter, amazing chocolate taste, and I love the gritty texture.I like dark chocolate, and I usually buy 85%. Honestly I didn't expect 95% dark chocolate to taste very good. And it doesn't. The texture is a bit chalky and it's a little bitter, as expected. If I add some salted almonds, it's edible, but still leaves an unpleasant aftertaste. I'm going back to my 85% dark chocolate. But if really dark chocolate that you eat for the health benefit, not the taste, is what you're looking for, this is it.There is something about this Taza Wicked Dark that keeps me coming back to it over and over again. It is the stone ground gritty texture that has me hooked. I now prefer this over the creamy texture of most other dark chocolate.I stopped buying Lindt 95 because it is processed with alkali. Look at the back label of the Lindt 95 and you will see "cocoa powder processed with alkali". Equal Exchange Total Eclipse is also good but I prefer Taza Wicked Dark because of its gritty texture.This is really addicting.I have tried many dark chocolates in the past. I wanted something that has a very high content of cacao for the health benefits. This definitely hits that mark. It is one of the highest I’ve seen or tasted. It is definitely bitter compared to other chocolates out there, especially if you’re only used to eating Nestle and milk chocolate, this may not be your cup of tea. It is bitter, but it still has enough sweetness to keep you coming back for more. My girls and I have one piece every day. It’s such a nice pick me up and gives us a jolt mid day. The texture has a tiny bit of grittiness to it. We like it but some may not if they are texturally sensitive. Also, getting 6 for this price was a great deal.Slightly bitter .... Texture oddly crumbly.Best dark Chocolate ever, rich, flavorful, and only tiny bit sweet.Everything about Taza a chocolate 95% is fantastic. The flavor is bold and not very bitter. The texture is fabulous. The pieces break off easily.I don't know how they do it. It tastes so much better at 95% chocolate and the same 2grams of sugar than the next best brand that has 92% chocolate and 2 grams of sugar. The main difference that is obvious is that Taza brand Wicked Dark does not have any fats added separate from the beans such as cocoa butter or lecithin. The other obvious difference is that Taza lists organic cacao beans whereas the competitor uses cocoa beans. I have read that cacao is heated at a lower temperature than cocoa beans which normally leads to cocoa having the milder and less bitter flavor. And yet, Taza tastes far more mild than the cocoa competitor and has fewer different kinds of bitter flavor. Another way to get a smoother and sweeter taste profile with less sugar is to "dutch" cocoa with an alkaline solution. This leads to less acidity which means a milder and smoother flavor with less sugar. But, this chocolate indicates that it is not alkalized. So, it is interesting that it tastes milder, less acidic, smoother and a bit sweeter than the competitor that says it is made with cocoa versus Taza's ingredients listing just cacao and sugar (and actually a lower percentage of sugar). I am giving 5 stars assuming 100% honesty and disclosure and no deception. But, I am curious about how all of that is accomplished.
